Sầu riêng mua về tách bỏ hạt và vỏ, thu lấy khoảng 300g cơm sầu riêng. Cơm sầu riêng cho vào máy xay sinh tố cùng với 300ml sữa tươi không đường, bật nút và xay nhuyễn hỗn hợp.
300ml kem tươi whipping cho vào tô cùng với 140g đường trắng rồi dùng máy đánh trứng, đánh bông kem tươi là được.
Đổ kem tươi đã đánh ra tô sạch rồi thêm phần thịt sầu riêng đã xay nhuyễn vào cùng, trộn thật đều nguyên liệu. Nếu thích kem có màu vàng nhạt của sầu riêng, có thể thêm 1 giọt màu thực phẩm màu vàng để món kem có màu vàng nhạt nhé.
Đổ hỗn hợp kem sầu riêng vào khuôn, đậy nắp rồi đem cất ngăn đá 2-3 tiếng thì lấy ra và trộn đều kem để kem được mịn hơn. Cất kem vào ngăn đá sau 2 tiếng lại lấy ra trộn thêm 1 lần nữa là được, cất kem vào ngăn đá thêm 2 tiếng nữa là được.
