Sấu ngâm cạo sạch vỏ, khứa vào đường lên quả sấu, rồi ngâm ngay vào nước muối loãng cho khỏi thâm sau đó rửa sạch. Đun một nồi nước sôi đến khi nước nóng già, đổ sấu vào trần đến khi quả sấu hanh vàng thì tắt bếp, đổ ra rổ cho sấu nhanh nguội.
Cho 800g đường vàng và 1 lít nước vào nồi đun sôi coh đường tan. Ngoài ra, bạn cũng có thể ướp sấu với đường để qua đêm cho sấu ra nước, sau đó đem đun nước đường cho sôi. Sau khi nước đường sôi, thả gừng đập dập vào nồi, để nước đường sôi lại khoảng 1-2 phút thì tắt bếp, chờ nước đường nguội.
Nước đường nguội hoàn toàn thì trút ra lọ sạch, cho sấu đã chần vào, để nơi khô ráo thoáng mát, sau khoảng 2-3 ngày là dùng được.
