Ngâm gạo nếp khoảng 4h hoặc qua đêm Hành tây xắt hạt lựu, hành lá xắt nhỏ
Gạo nếp vo sạch, cho vào tô chịu nhiệt trong lò vi sóng. Đổ nước xâm xấp mặt nếp cao khoảng gần nửa lóng tay, cho xíu muối vào. Đậy khăn giấy lên tô. Bấm 2 lần 4 phút là xôi chín. Trong quá trình bấm lần 1, lấy ra đảo đều để xôi được chín đều hơn. Trong quá trình nấu xôi, bắt chảo dầu nóng lên, cho thịt bò băm + hành tây + hành lá + tiêu muối vào chảo xào chín.
Xôi chín, lấy ra để nguội bớt. Cán mỏng xôi ra thành hình chữ nhật, cho nhân xào chín vào 1 bên. Gập miếng xôi bên kia lại cho vừa khít nhân. Dùng plastic wrap ém chặt sao cho nhân và xôi dính lại với nhau. Cắt từng miếng vuông vừa ăn.
Chảo dầu nóng, cho từng miếng xôi vào chiên chín vàng đều 2 bên. (Mình dùng ít dầu để chiên thôi, chứ không chiên trong chảo ngập dầu). Xôi ăn nóng cùng với ketchup rất ngon. Giòn giòn giòn bên ngoài và dẻo dẻo bên trong.
